Is anyone else wondering why we don’t have a cute protein-based healthy brunch place? I would love to see a brunch place that caters to the fit blogger crowd, complete with protein pancakes and cute decor. Until that happens, we have to take matters into our own hands with some creative recipes, like these healthy protein pancakes.
Why pancakes? Because you can mix anything in there and make it work! We’ll be using protein powder for our recipe, but you can also sprinkle in collagen powder for a beauty booster.
Protein Packed Pancakes
1 cup oat flour
2 scoops protein powder
2 tablespoons ground flax seeds
2 teaspoons baking powder
1/4 cup Greek yogurt
1/2 cup egg white
Pinch of cinnamon
Pinch of salt
1. In a small bowl, add baking powder to the yogurt and let sit for a few minutes while you mix the other dry ingredients.
2. Beat the egg and egg whites together, add to the dry ingredients. Mix in the yogurt and baking powder.
3. Heat up a griddle or pan and add a pat of butter. Pour in some batter, wait for it to bubble on top before flipping.

If you’re trying to generally get more protein in your life, you don’t need to confine yourself to animal-based sources. Try healthy treats like edamame or seitan (BBQ seitan is amazing) to incorporate more protein throughout the day so you don’t have to rely on consuming it in bulk.
